Mustard Sauce, a Florida Classic

Ingredients:

  • ½ cup Dijon mustard
  • ¼ cup mayonnaise
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon fresh lemon juice (about half a lemon)
  • 1 teaspoon hot sauce (adjust to taste)
  • 1 teaspoon Old Bay seasoning (optional, for extra flavor)
  • Salt and pepper to taste

Instructions:

  1. Combine Ingredients: In a medium bowl, whisk together the Dijon mustard, mayonnaise, Worcestershire sauce, lemon juice, and hot sauce until smooth.
  2. Add Seasoning: Stir in the Old Bay seasoning if using, and season with salt and pepper to taste.
  3. Chill: Cover the bowl with plastic wrap and refrigerate the sauce for at least 30 minutes. This allows the flavors to meld together.
  4. Serve: Serve the mustard sauce alongside your chilled stone crab claws. Enjoy!

Tips:

  • Feel free to adjust the ingredients to your taste; you can add more lemon juice for acidity or more hot sauce for a kick.
  • The sauce can be made a day in advance for even better flavor. Just store it in an airtight container in the refrigerator.

Bahamian Butter Garlic Sauce

Ingredients:

  • ½ cup unsalted butter (1 stick)
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped (plus extra for garnish)
  • 1 tablespoon fresh lemon juice (about half a lemon)
  • Salt and black pepper to taste
  • 1 teaspoon Old Bay seasoning (optional)
  • ¼ teaspoon cayenne pepper (optional)

Instructions:

  1. Melt the Butter: In a medium saucepan, melt the unsalted butter over medium heat.
  2. Sauté the Garlic: Once the butter is melted, add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to let it brown.
  3. Add Seasonings: Stir in the chopped parsley, lemon juice, Old Bay seasoning (if using), and cayenne pepper. Season with salt and black pepper to taste.
  4. Simmer: Allow the sauce to simmer for another minute or two, stirring frequently, until everything is well combined and heated through.
  5. Serve: Remove the saucepan from heat and serve on the side with your chilled claws. Garnish with extra chopped parsley.
  6. Enjoy: Serve immediately with additional lemon wedges on the side for squeezing over the claws.

Tips:

  • For added flavor, you can also include a splash of white wine or a few drops of hot sauce while sautéing the garlic.
  • This sauce is also delicious served warm as a dip for bread or vegetables.

Butter Lemon Sauce

Ingredients:

  • 1 stick butter (½ cup) - You can use salted or unsalted butter.
  • 2 tablespoons fresh lemon juice (about 1 lemon)
  • Salt to taste
  • 1 tablespoon lemon zest, from about 1 lemon (optional)
  • 1 tablespoon fresh parsley, chopped, plus extra for garnish (optional)

Instructions:

  1. Melt the Butter: Melt butter in a saucepan over medium heat.
  2. Pour butter into a ramekin
  3. Add Lemon Juice.
  4. Add Salt and any optional seasonsing: Add salt to taste and any optional seasoning. Stir to combine.
  5. Serve: Serve on the side with your chilled claws
